Honey and beer glazed BBQ chicken skewers

We’re back to another chicken recipe today, seeing as we’re poultry specialists and all! This one is a fave amongst the Thompsons of Smithfield crowd... most likely because of the beer!

Serves 4

Ingredients

  • 2 cloves of garlic, crushed
  • 1/3 cup of honey
  • 1/2 cup of beer
  • 1tsp paprika
  • 1/2 tsp Dijon mustard
  • 4 tablespoons soy sauce
  • 1/2 tsp ground black pepper
  • 1 medium shallot, chopped
  • 1 tablespoon olive oil
  • 6 boneless skinless chicken thigh fillets, cut into cubes
  • Wooden or metal skewers (if using wooden, don’t forget to soak them in water for 30 minutes first)

Method

  • In a small bowl whisk together the garlic, honey, beer, paprika, mustard, soy sauce and pepper.
  • Add the chicken cubes and place in the fridge for at least an hour (even better if you leave them over night).
  • Remove the chicken from the marinade (set the remaining marinade aside), and thread the chicken through the skewers.
  • In a non-stick pan over a medium/high heat, Sautee the shallots in the olive oil until they have softened.
  • Add the left over marinade, and bring to the boil, stirring frequently until the sauce has reduced and thickened (roughly 8 minutes).
  • Brush the chicken with the sauce, and place on the BBQ.
  • Keep brushing the chicken with the sauce, and turn everything 2/3 minutes until cooked through (roughly 10 minutes).
