Here at Thompsons of Smithfield we love easy to make, but seriously tasty food, and this recipe delivers just that! If it's a gorgeous day whack these beauties on the BBQ, or alternatively use your oven grill.

Ingredients
- 300g lean lamb, diced
- ½ onion, cut into large chunks (optional)
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic puree
- 1 tablespoon Olive Oil
- 1 tablespoon mixed herbs
- Juice of half a lemon
- Pinch of salt and pepper
- Wooden or metal skewers (if using wooden, don’t forget to soak them in water for 30 minutes first)
Method
- Place the lamb, mustard, garlic puree, olive oil, mixed herbs, lemon juice, salt and pepper into a bowl and mix until the lamb is coated with the marinade.
- Cover and leave in the fridge for a minimum of 1 hour (or overnight).
- Thread the lamb onto 4 skewers, alternating with pieces of onion.
- Before you start cooking make sure charcoal and gas grills are up to temperature. Alternatively you could use the grill of your oven.
- Arrange the skewers on the BBQ/wire rack of a grilling tray. Grill the kebabs for 3-4 mins on each side, until the lamb is cooked through and the onion is beginning to brown.
Serve with warm pitta bread and a mixed salad.
